Mexican Bean Burgers
I posted a pic of these beany babes on my Instagram and a whole heap of you seemed to love the look of them. So I’m posting the recipe here so you guys can try them for yourself!
200g of beans, you can use a mix of any beans you like/have but the best are kidney beans, black beans and butter beans
1/2 red onion chopped finely
1 clove of garlic
2 tsp ground cumin
2 tsp smoked paprika
1 tsp ground coriander
10g fresh corriander leaves
2 tbsp plain flour
I usually make mine pretty mild as some people in our house don’t like spicy food but if you are fond of a good kick you can add some cayenne pepper and jalapeños too.
-Rinse and drain your beans.
-Add the onion, garlic and fresh corriander to a food processor, pulse until they have broken up into small pieces (if you’re using jalapeños add them at this stage)
-Add your beans and spices, pulse together until you have a smoother consistency on the bottom but a chunkier mix on top
-Add sweetcorn and pulse lightly
-Add flour to combine and season with salt and pepper
-Form the mixture in to patties
-Allow to chill in fridge for 20 mins while you preheat the oven to 200 degrees C
-Remove the patties from the fridge and lightly fry on both sides in an oiled pan
-Once fried pop the patties in the oven for 15-20 mins.
-Prepare your buns, guacamole and salad at this time
-After 20 mins remove the burgers from the oven and layer onto buns with your favourite toppings.
